Austinites will soon bid farewell to a beloved vegan culinary establishment. Rebel Cheese has announced that its bistro located at 2200 Aldrich St., suite 120, will close its doors on December 24, 2023. The news came via a newsletter sent out on December 16, marking the end of an era for the popular destination known for its plant-based cheese offerings.
Despite the closure of the bistro, Rebel Cheese is not exiting the market entirely. The company maintains a robust distribution network that allows its products to be available in numerous locations beyond its storefront. The newsletter hinted at a positive transition, stating that a new plant-based business will take over the space and “shares the same heart that we do.” However, details about the incoming tenant remain undisclosed, and current records from the Texas Department of Licensing and Regulation do not reflect new developments for the address.
In a reassuring message to loyal customers, the company confirmed that select products, including popular sandwiches, will continue to be available in the deli case even after the bistro’s closure. Current staff will also transition to positions with the new tenant, ensuring continuity for customers familiar with the team.
As the bistro approaches its final days, customers can take advantage of a 20 percent discount on grocery items and wine until 3 PM on December 24. Gift cards will remain valid for purchases in the online store, with customers encouraged to contact the company for activation.
Founded in 2019, Rebel Cheese has experienced rapid growth. Shortly after opening, the Covid-19 pandemic prompted a shift towards online sales and wholesale. The company now operates out of a 9,000-square-foot factory and distributes its products to hundreds of locations across the United States and Canada. The business gained significant recognition in 2023 when it appeared on the television show Shark Tank, where investors Mark Cuban and Lori Greiner acquired a 10 percent stake for $750,000.
While the closure of the Austin location marks a significant change, fans of Rebel Cheese can still find solace in the company’s remaining shop in Manhattan, New York. The newsletter expressed gratitude for the support the company has received, stating, “Though we are still a small team, we’ve been so fortunate to have seen such growth and the loyalty of team members and customers alike.”
Looking ahead, Rebel Cheese aims to focus on e-commerce and wholesale distribution, as well as its New York location, with plans to start 2026 with renewed energy and direction.
